Salad
- Head of Romaine Lettuce, clean and patted dry.
- grated parmesan cheese
- Ceasar dressing (below)
- Croutons
Rip lettuce to bite sized pieces. Sprinkle cheese on lettuce. Toss together with dressing. Add croutons last.
Dressing
- 1/2 c olive oil
- 1/4 c white wine vinegar
- juice of one lemon
- 1/4-1/2 t dry mustard
- 2 T prepared dijon mustard
- 1 clove glarlic, smashed or 2 t garlic powder
- 2 t salt
- 1 t pepper
- 1 t anchovie paste (optional)
Whisk or shake all ingredients together. Refridgerate extra. Olive oil solidifies in a refridgerator. To loosen solidified olive oil let sit for 5 minutes or microwave on low for 5-10 seconds. Shake well before using.
